Chef’s Winter Recipes: Jason Brumm’s Grassfed Meatloaf Sandwich

Winning the "Chef Wanted with Anne Burrel" cooking show on Food Network sky-rocketed Chef Jason Brumm's name into the culinary industry. The show taped in August, and by September he was already working for Second Home Kitchen + Bar when the show finally aired. He's a graduate from the Culinary Institute of America, boasting more than 18 years of exemplary experience. He has worked with several Michelin-starred spots in France and Italy, and he has also opened restaurants in Washington and Nashville. (Click 'Next' to see the recipe) We asked Chef Jason Brown for a recipe he thinks perfectly reflects the winter season. He handed us his recipe for "Grass-fed Meatloaf Sandwich." This recipe is really easy to make, and it's quite hearty and comforting, too. Grass-fed Meatloaf Sandwich Meatloaf 1.75 pounds Local Grassfed Beef 0.75 pounds ground pork 0.25 cup garlic 0.5 piece onion 0.5 cup ketchup 0.25 pound mushrooms 0.5 cup panko 4 tablespoons butter Pinch of Parsley 1. Saute the onions, mushrooms & garlic in the butter 2. Liquid should be evaporated 3. Let cool 4. Add all ingredients together and mix by hand until homogenous. 5. Place in loaf pan and bake until internal temperature of 145 is reached. Let cool. Beer cheese 5.5 ounces Sessions Beer or other dark not to hoppy beer 2.5 cups of shredded sharp yellow cheddar Pinch of salt Pinch of pepper 1. Place all ingredients into food processor 2. Puree until homogenous Chipotle Ketchup 1 cup ketchup 4 tablespoons chipotle pepper puree 1. Combine all ingredients and mix well.
