I was not familiar with kale until about two years ago. In an effort to stay healthy as an avid foodie, I’ve incorporated green drinks into my daily routine. They always include kale. It’s related to cabbage, but I think it’s tastier.
Vitamins B2, B3, C, E & K
What does this mean?
All the Beta carotene in kale turns into vitamin A once it has been digested. It boosts the immune system, protects the respiratory system (perfect during flu season), helps out the digestive system and builds strong bones, hair and teeth. If you happen to have eczema, kale is said to lessen its effects.
Some Kale Tips
There are three types I love (curly, Tuscan and red)
Buy healthy looking kale with dark green leaves.
If the kale smells like cabbage, skip it.
Rinse it in cold water as soon as you get it home, it will last longer.
Do not dry it completely before storing. Leave a few water drops, wrap in paper towels and then in plastic bags to extend it’s life.
How to Eat It?
My favorite way is to drink it. My green drink recipe is so tasty even the kids in my family love it. But there are tons of other ways to eat it:
Get a really good blender (I have a blendtech at home I love). Wash the following fruits and veggies (I have no measurements, and you will figure out the best mix for your taste buds): kale, spinach, 1 rib celery, 1/2 cucumber, 1/2 apple, 1/2 pear, 1/2 banana, ice, almond milk. Puree them together until you get the consistency you like. Delicious.
