On FriendsEAT’s Restaurant Spotlight for today, we are featuring Kevin Taylor’s at the Opera House in Denver, Colorado. We interviewed Executive Chef Ryan Taylor, who shared with us a few tidbits about the restaurant and their food.
FriendsEAT: Tell us a little something about your restaurant.
Chef Ryan Taylor: Kevin Taylor’s at the Opera House is located in the Chambers Grant Salon in the Ellie Caulkins Opera House at the Denver Center for Performing Arts. The elegant restaurant serves pre-theater cocktails and dinner on evenings with performances in the Ellie Caulkins Opera House, Buell Theater and/or Boettcher Concert Hall. Kevin Taylor Catering also serves all of the sophisticated spaces within the Opera House for private events.

FE: Are there any Awards you have received? Any you’re particularly proud of?
Chef Ryan: I was named among Zagat Denver’s “30 Under 30” in 2015.

Maine Lobsters with Lobster Spaetzele Mac and Cheese
FE: What is your most popular dish? Why do people love it?
Chef Ryan: One of the most popular dishes is the Hudson Valley foie gras mousse, which is served with a peanut butter powder, lemon confit, celery and huckleberry verjus. It’s an indulgent treat. Additionally, guests love the butter poached Maine lobster with lobster spaetzele mac & cheese, gruyere, asparagus, cauliflower and truffle cream, which is an artful take on a delectable lobster dish.
