Key Lime Cookie Recipe
INGREDIENTS
MIX and SET ASIDE
3 cups Flour
2 teaspoons Baking POWDER
1/2 teaspoon Salt
BLEND in Mixer until creamy
1 cups unsalted butter
2 cups Granulated Sugar
1/4 cup Key Lime Juice
Add:
2 large eggs
ADD FLOUR MIX to wet ingredients
2 teaspoons KEY LIME ZEST
INSTRUCTIONS
Using an electric mixer cream the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in the lime juice. In a separate bowl, whisk together the flour, baking powder, key lime zest, and salt.
Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined.
Refrigerate dough for 1 hour.
Preheat oven to 350°.
Bake for 12 to 15 minutes, or until the edges are lightly browned.
Allow cooling.
