They’re light, zesty and a perfect combination of lime and vanilla. It’s also way healthier than Key Lime Pie since the recipe contains no sweetened condensed milk.

How to make cookies that taste like Key Lime Pie

Key Lime Pie Inspired cookies

INGREDIENTS

MIX and SET ASIDE

3 cups Flour
2 teaspoons Baking POWDER
1/2 teaspoon Salt

BLEND in Mixer until creamy

1 cups unsalted butter
2 cups Granulated Sugar
1/4 cup Key Lime Juice

Add:

2 large eggs

ADD FLOUR MIX to wet ingredients

2 teaspoons KEY LIME ZEST

 

INSTRUCTIONS

Using an electric mixer cream the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in the lime juice. In a separate bowl, whisk together the flour, baking powder, key lime zest, and salt.
Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined.
Refrigerate dough for 1 hour.

Preheat oven to 350°.
Bake for 12 to 15 minutes, or until the edges are lightly browned.
Allow cooling.
Enjoy.

(*if you don’t have key limes, you can use regular limes and the recipe will still be delicious)
