When Millesime first opened in New York City, I was hyped. I could not wait to go. Once I went I was hooked. At Millesime, Chef Alan Ashkinaze prepares the most elegant, yet comfortable French seafood. I highly suggest the Quenelles (best in the city), and the grilled Caesar salad (the stuff is like crack cocaine). I asked Chef Ashkinaze to participate in our Chef Summer Recipes series. He graciously contributed his Mackerel Escabeche recipe. If you have never made an escabeche, here’s your chance. To me, escabeche is the ultimate summer dish.
1 pound Mackerel Filet
1 cup Olive Oil
2 cups White wine
1 cup White wine Vinegar
½ cup Sugar
½ cup Shallots, shaved
¼ cup Garlic, shaved
1 each carrots, cut into rings
1 each lemon, sliced
1 teaspoon Coriander
1 each Cloves
½ teaspoon Fennel seeds toasted
1 sprig Thyme, wrapped & tied cheese cloth
1 tablespoon Kosher salt
½ teaspoon White Pepper, freshly ground
Using a sharp knife and cutting board, cut Mackerel into 2 ounce portion and lay in glass baking dish. Season fish with salt and pepper 15 minutes before marinating.
Sweat all vegetables in Olive oil, add wine, vinegar and sugar and bring to a boil, add remaining ingredients and let simmer for 15 minutes.
Gently pour hot liquid over seasoned mackerel, let steep for 1 minutes and refrigerate to cool.
2 +1 tablespoons Horseradish, freshly grated
1/4 cup Cream
1/2 cup CrÃ¨me fraiche
1/2 teaspoon White Pepper, freshly ground
In small pot gently warm two tablespoons horseradish to infuse for 5 minutes, strain and cool, then whip the cream with crÃ¨me fraiche and pepper, fold in remaining horseradish.
Remove the carrots and shallots from the Marinated fish and small dice; add some of the pickling broth and season with salt and pepper.
Lay 2 filets in center of plate reserving space for Mache salad. Spoon plenty of horseradish cream over the mackerel filets and then sprinkle with Black Pepper. Spoon the carrots and shallots around the fish with the broth
