Chef Diana Stavaridis is the executive chef of Manhattan House in Manhattan Beach, California, where they proudly serve sustainable, natural, local, and non-GMO products whenever possible. Chef Diana has helped in conceptualizing this gastropub from the ground up. We were fortunate to get an interview with her to learn more about the restaurant, the food, and their business philosophy at Manhattan House.
FriendsEAT: Tell us about your restaurant. What makes it special?
Chef Diana: Manhattan House is an American-style gastropub that prides itself on serving garden-to-plate dishes with ingredients procured locally. They are very focused on incorporating the community into both their supply chain operations and giving back to their Manhattan Beach neighborhood where they reside.
FE: What is your restaurant philosophy? Is there something that everyone strives for with each action taken at your restaurant?
Chef Diana: Manhattan House prides itself on food sustainability and making sure guests know exactly where their food came from. We only use ingredients sourced from a close radius of the restaurant (hyper-local ingredients) and even have an on-site garden where we grow our vegetables. We partner with GrowingGreat, a local non-profit school garden and nutrition education organization that allows young kids to learn the benefits of consuming homegrown ingredients they the kids themselves grew.
FE: What is your most popular dish? Why do people love it?
Chef Diana: The Carrotology v2.0 dish is one of our top sellers. I was inspired to create a dish solely comprised of carrots prepared in 12 ways. Ways include carrot hummus, carrot top oil, carrot caramel and more. It’s a hit with guests because it’s tasty, as well as vegan and gluten-free.
FE: And what is the one cocktail your bartender loves to make?
Chef Diana: Manhattan House has a wide selection of “House Manhattans” which are fun to make. But one cocktail of note is the Reaper-Ita. It is a margarita-style drink made with Reposado tequila that they infuse with Carolina Reaper peppers grown in one of our gardens down the street from the restaurant; mixed with Cointreau, our House margarita mix and served on the rocks. Carolina Reaper peppers are the hottest peppers in the world.
FE: What makes you stand out above the rest?
Chef Diana: Besides incorporating the community into our supply chain restaurant operations, the gastropub is big into giving back to the community. I founded the “GrowingGreat Jr. Chefs Program” that allows children of nearby elementary schools to create a dish for the restaurant’s rotating seasonal menu.
FE: What type of cuisine do you offer at your restaurant?
Chef Diana: We are a farm-to-table restaurant, or as we like to say, seed-to-plate. We grow our produce in local community gardens nearby in Manhattan Beach and we have partnerships with many food suppliers who also source locally. Our homemade dishes are all made from scratch. We only use the most fresh and homegrown ingredients. We bake all of our sourdough and brioche breads in-house and also smoke most of our meats.
FE: Do you offer any deals such as happy hour specials, brunches, etc?
Chef Diana: We are now offering brunch on Saturdays and Sundays that includes housemade pastries like croissants and cinnamon rolls baked fresh in our kitchen. We are celebrated our first year anniversary in July by offering a free entree under $25 to guests who also share a July birthday. July will also mark the start of our 51% happy hour, which includes 51% off of all glasses of wine, beer and cocktails from 5:00-6:30 pm during all hours of operation.
