Eggs have always been a favorite of mine. I think they should be included into every meal and every dish. To celebrate egg month, I’ve put together a list of some of my favorite dishes featuring this amazing ingredient including the above vegetarian paella (and no, they are not all entrees, but I just could not resist the alliteration).
Breakfast: Oeufs En Meurette Leave it to the Burgundian French to create such a decadent breakfast. A Meurette sauce is a simple wine sauce that goes incredibly well with eggs (and steak). Create the sauce as the recipe calls and then poach the egg in the sauce. It is the breakfast of royalty.
Brunch: Frisee Salad with Poached Egg and Lardons: Made correctly this is a great dish. The egg brings on the protein, the lardons just the right amount of fats and the frisee keeps it fresh. This is a great dish to pair with a bellini.
Lunch: Egg Salad with Sweet Pickles: Make this egg salad with light mayo, add celery and sweet pickles for an irresistible taste. You can serve it as an open faced sandwich on toast or on a bed of lettuce for a slightly healthier treat.
Dessert: Egg Custard: Rich, silky and decadent. One of many desserts featuring eggs. And definitely one of my favorites.
