It takes just 30 minutes to make (40 with prep time), and you end up with the juiciest stuffed tomatoes ever. Pork Stuffed Tomato Recipe Ingredients
- 8 tomatoes
- Sea Salt
- 16 oz ground pork (I like Berkshire)
- 1 cup breadcrums
- 2 eggs
- Freshly chopped parsley (to taste – I use 1 tbsp)
- Butter
How to Make this Easy Pork Stuffed Tomato Recipe
- Preheat the oven to 350 F
- Cut the top off the tomatoes
- Scoop out the seeds (use a spoon)
- Sprinkle some sea salt into the tomatoes
- In a bowl, mix the ground pork, breadcrumbs, eggs, and chopped parsley
- Sprinkle mix with salt & pepper
- Fill the tomato cavities with the pork mixture
- Add a tiny bit of butter into the top of the pork mixture
- Cover with the tomato top
- Cook for 30-35 minutes
Garnish with fresh parsley and Parmesan & enjoy
