Few things say summer better than a perfectly made lobster roll. Lucky for us that Legal Sea Foods Chef Rich Vellante was generous enough to share his secret recipe for the perfect lobster roll with us.
Chef Velante joined the Legal Sea Foods team and quickly rose up the ladder to become Executive Chef in 1998. He now oversees all culinary operations, develops new recipes and menus and manages and trains the culinary staff in all Legal Sea Foods kitchens. No small feat.
Chef Vellante is a graduate of Hamilton College. He also studied at the French Culinary Institute in New York City, and spent two years in Italy, cooking his way through several provinces using traditional, farm-fresh ingredients and seafood.
Apparently all that training worked out. He’s got quite a resume behind him. Rich earned a Chef 2000 award, was voted “Menu Strategist of the Year”by Restaurant Business and was included among the nation’s Top 50 R&D Chefs by Nation’s Restaurant News. He has designed numerous dinners for the Confrerie de la ChaÃ®ne des RÃ´tisseurs; he was the first civilian chef in US history to cook for the nation’s Senators (2002 and 2004) and he has repeated as guest chef at the prestigious James Beard House and Culinary Foundation in New York City.
Chef Vellante told us he loves summer cooking: “Cooking in the summer is a thrill because it’s as much about the experience as the food ” and that’s why I love it. There is nothing better that fishing in the morning, pulling vegetables from the garden and sharing the bounty of the season with family and friends at dinner. It’s one of the simple and rewarding pleasures in life.”

- 1 ½ lbs lobster salad (see recipe below)
- 4 leafs red or green leaf lettuce
- 4 hot dog rolls
- Lightly brush both sides of rolls with butter.
- Place on griddle and grill both sides until golden brown.
- Line each roll with a leaf of lettuce.
- Divide lobster salad evenly among each roll.
- 1 ¼ lbs lobster meat
- 4 t fresh lemon juice
- ¼ cup green onions sliced
- ¼ cup diced celery
- ½ cup mayonnaise
- Season with kosher salt and ground pepper to taste
- Gently fold all ingredients together.
