The food in Boracay did not treat me so well the first few days. Had a lot of overly greasy, fried food and even ended up sick. It was a relief and delight to stumble onto great food at the Discovery Shores Hotel. One of their restaurants, The Sands has some delightful fare. As I perused the menu, I expected to be disappointed. That was until I flipped over the page and saw the wonderful options that just revealed themselves to me.
Since I loved the chicken inasal so much at Epic, I decided to have this dish again. Antonio and I were really craving vegetables, so we ordered the vegetarian paella and two glasses of wine. The wine selections were very good for BTG. The wines were fresh and crisp (something that cannot be said about other restaurants. I was served brown Chardonnay at various Boracay establishments).
Before our dishes came out, our server brought out a gorgeous garlic soup. She explained that it came with the Vegetable Paella. The soup was delightful. A light broth which was redolent of garlic, but not in the stinky breath kind of way. This was an elegant and subtle garlic scent. We both devoured the soup as we raved about its flavor. By this point, we were both excited.
The chicken inasal was good. I prefer the flavor of the chicken inasal at Epic, but here the chicken was cooked perfectly (at Epic some parts of my chicken were a bit bloody). Juicy, nicely seared on the outside and just enough spices. It also came with three dips: one was soy, the other a cucumber vinegar and the last what I assume was an annato flavored oil. The chicken I thought worked best with the cucumber. The soy was way too salty, and the oil was flavorless. Antonio quickly discovered that if you dip the chicken into the oil and then the soy that you have a great combination.
The paella was off the hook. The rice was perfectly cooked. The vegetables were fragrant and cooked to the perfect point. Best part, the paella was topped with boiled egg slices. The yolks were slightly runny in the middle. Just the way I like it.
These dishes could have easily fed five people. The server came by to ask how we liked our food. We told her that we loved it, she offered to put it in a to go container. I quickly and gladly accepted the offer. I made dinner reservations to go the following week.
