Imagine my surprise as I headed over to a caviar vendor at Fancy Food, only to be told it was 100% vegetarian. Caviart was the coolest, most interesting thing I encountered at Fancy Food Show.
The taste and texture were both very close, and the price was significantly lower than actual caviar. My brain automatically went into “malpensao” mode (it’s slang for someone who thinks the worst of everyone)…is every cheap sushi place using this stuff instead of actual roe? If they are they are evil geniouses. The untrained tongue could not tell the difference.
Caviart does not have the same pop that roe has, but it is pretty darn close. Turns out Caviart was invented by mistake, Jens MÃ¸ller, the inventor, was showing his kids how seaweed captures enzymes. The experiment went awry, and small beads dropped out instead of turning the colour of the water from green to red. A couple of weeks later Jens noticed that the beads could be mistaken for caviar.
