Christmas Bourbon Balls

1 cup of pecans, finely chopped
1/4 cup Kentucky bourbon
1 stick of butter, softened
1 1-pound box confectioner's sugar
1 box semi-sweet chocolate squares
TipsThese pecan chocolate bourbon balls can be made and kept in an airtight container in the refrigerator for up to 2 weeks. Can you freeze bourbon balls? Of course, you can! If you do so, they will last for about 2 months.
Step 1Sift confectioner's sugar; cream with butter.
Step 2Add bourbon and pecans.
Step 3Roll into 1-inch balls and place on a greased cookie sheet and cover with moist paper towels.
Step 4Refrigerate at least two hours.
Step 5Melt chocolate in the top of a double boiler.
Step 6Using a skewer, dip chilled balls in chocolate, allowing excess chocolate to drip off.
Step 7Place balls on a dish to harden.
Step 8Seal in a tin, then refrigerate.
Step 9Makes three dozen.
