Easy Yuca Fries
These will beat out regular french fries any time. Serve with some chimichurri and leave your friends begging for more.

8 garlic cloves
1 bay leaves
2 tablespoons salt
4 quarts water
1 1/2 pounds yuca (washe, peeled, and sliced into fries)
(you can use frozen yuca as well)
vegetable oil for frying
Step 11. Put the garlic, bay leaves, salt, and water in a saucepan.
Step 22. Bring to a boil.
Step 33. Add Yuca and reduce the heat to medium, and simmer until yuca is tender, but not sticky or falling apart, about 30 minutes (depending on your stove cooking time may be more or less). You will determine cooking time the more you make these.
Step 44. Drain the yuca on paper towels. When they are cool enough, pat the dry.
Step 55. In a deep skillet, heat oil to 375 Fahrenheit.
Step 66. Fry the yuca until golden, drain on paper towels, sprinkle with salt and serve with your favorite dips (I like chimichurri, mayonnaise, aioli)
