This recipe is similar to fishcakes. And leaves room for creativity!
4 Main Ingredient: Fish*Egg*Mushrooms*Dairy*Butter*Shellfish Cuisine: English/Scottish
6 ounces (1Â½ cups) cooked white fish (cod or halibut are great)
2 ounces ( 1/2 cup) peeled prawns
2 ounces (1/2 cup) mushrooms
2 ounces (1/2 cup) breadcrumbs
2 lightly beaten eggs
4 ounces (1 cup) fine oatmeal
2 teaspoons dried parsley
Salt and pepper to taste
A small quantity of flour (1/4 cup) and butter to taste

Step 1Remove any skin and bones from the fish. An easier way to do this would be to buy filets, but it depends on how fresh you want your sausage. Finely chop the cooked prawns. Chop and fry the mushrooms in a little butter.
Step 2Using a large bowl, break up and pound the white fish, chopped prawns, cooked mushrooms, breadcrumbs, parsley and seasoning, mixing this together with half the beaten egg.
Step 3With floured hands, form the mixture into a number of sausage shaped portions. Dip into the remaining beaten egg and roll in the oatmeal. Fry in hot, shallow oil for about 6/7 minutes, turning regularly until golden brown. drain onto rack or paper towles.
