Saint Patricks Guiness Lamb Stew

2 tsp butter
3 pounds boneless leg of lamb, trimmed of fat and cubed
1 can of Guinness
14-ounce can of beef broth
8 oz tomato sauce
1 tsp salt
1/2 tsp ground black pepper
1/4 tsp dried thyme
1/2 pound white pearl onions peeled
1 cup frozen baby peas
1 pound large mushrooms cut in half
1 cup half and half
1/4 cup flour

Step 1Brown the lamb in butter in large Le Creuset type oven. Add the guinness, beef broth, tomato sauce, salt, pepper, thyme, and onions.
Step 2Cover and simmer for 45 minutes.
Step 3Skim off excess fat.
Step 4Add the peas and mushrooms.
Step 5Cover and simmer again an for 15 minutes.
Step 6Whisk the flour into cream to thicken.
Step 7Blend into the stew and bring to a low boil.
Step 8Cook for 2 minutes and stir until thickened.
Step 9Season with salt and pepper.
Step 10Serve over mashed potatoes.
