Smoky Beef Calzone

1 pound pizza dough
8 ounces lean, ground beef
2 cups of shredded mozzarella
4 1/3 tsp. of extra-virgin olive oil
1 chopped red bell pepper
2 Â½ tsp. of paprika
1 tbsp. of sherry vinegar
Kosher salt and pepper for seasoning
Step 1Preheat the oven to 450 degrees F
Step 2Divide the pizza dough into four portions.
Step 3Cover with a towel and set aside.
Step 4Saute ground beef in olive oil.
Step 5Add salt, pepper and paprika.
Step 6Cook for 15-20 or until browned.
Step 7Add bell pepper, and cook for two more minutes. Remove from heat and let it cool.
Step 8Roll each portion of the dough into round pieces with 8 inches diameter.
Step 9Place the meat and the mozzarella on either side of the dough.
Step 10Leave about Â½ inch border on all sides.
Step 11Fold the dough and crimp.
Step 12Slit the dough.
Step 13Brush with olive oil.
Step 14Bake in the oven for 10-15 minutes or until golden brown.
Step 15Serve with a side of greens tossed in vinegar and seasoned with salt and pepper.
