Christmas Honey Biscuits

Traditional German honey biscuits perfect as a Christmas gift.

225 g honey

225 g sugar

225 g butter

½ cup water

570 g plain flour

1 heaped teaspoon ground cloves

½ teaspoon cinnamon

1 heaped teaspoon bicarbonate of soda

1 teaspoon ginger

Step 1Melt the honey, sugar, butter and water. Cool.

Step 2Sift the flour, soda and spices into a mixing bowl.

Step 3Add the melted mixture and stir thoroughly.

Step 4Let stand overnight.

Step 5The dough will harden, knead well aver standing.

Step 6Roll out dough onto a floured surface.

Step 7Using Christmas shapes cut out biscuits.

Step 8Place on greased tray and bake at 180°C until golden brown.

Step 9For crispier biscuits roll the dough thinner. For chewy, softer biscuits, roll the dough out thicker.
