8 large hard-cooked eggs
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 dashed hot sauce, or to taste
paprika for sprinkling
TipsTo easily peel your hardboiled eggs for your deviled eggs, wait until they are cool. Roll on your kitchen counter and tap on both ends to find the one with the air space. Take a piece of peel off that side. There is a membrane between the shell and the egg, grab a piece of this and begin to pull as you roll the egg.

Step 1Discard shells from eggs and slice each egg in half lengthwise. Remove yolks and arrange whites on a plate.
Step 2In a bowl mash yolks with mayonnaise, mustard, hot sauce, and salt and pepper to taste and spoon mixture into whites. Chill deviled eggs, covered, 1 hour.
Step 3Just before serving sprinkle eggs with paprika and serve cold.
