Earl Grey Tea Truffles

1 pound bittersweet chocolate(64-68%)
2 cups heavy cream
3 tbsp loose Earl Grey leaves, or up to 7 tea bags
5 tbsp unsalted butter, soft
1/2 cup un-sweet cocoa powder, for rolling cookies in
TipsDon't know how to scald milk? It's simple. Turn your heat to med-low. Add the milk and cook while stirring. This process should take 4-5 minutes. Once you start seeing little bubbles on the side it is almost done. To be safe, don't cook for more than 4-5 minutes.

Step 1Chop the chocolate into small pieces and put in a large bowl.
Step 2In sm saucepan over med heat heavy cream and tea leaves to scalding.
Step 3Turn off heat, steep 15 min.
Step 4Bring cream to scalding again.
Step 5Strain cream over chocolate to cover completely.
Step 6Set aside for 5 min, then whisk until smooth.
Step 7Whisk in butter to still-warm chocolate mix until smooth.
Step 8Refrigerate until firm enough to scoop, at least 2 hours.
Step 9Use a small #100 cookie scoop or tsp, scoop out the base, form into balls by rolling quickly in hands.
Step 10 Place cocoa powder in a shallow bowl, roll each truffle to cover.
