Easy Herb Roasted Duck

a bunch of chives

3 bay leaves

2 sprigs of tarragon

1 sprig of rosemary

a bunch of thyme

1 large fatty duck

1 block of butter

1 cup veal stock (or beef stock)

salt & pepper (I used Touriga Nacional Salt from the Portuguese Company Salt to Eat).


To make sure the duck is properly cooked, it should range between 135°F and 170°F ( 57°C to 76°C).

Step 1Preheat oven to 200 C (400 F)

Step 2Rub the duck with sea salt and pepper.

Step 3Layer butter on top.

Step 4Place the herbs inside and underneath the duck.

Step 5Cook the duck uncovered, breast side up for 20 minutes.

Step 6Lower the temperature to 180 C (350 F).

Step 7Baste with stock regularly while roasting the duck for about 1 hour and a half.

Step 8Serve & Enjoy.
