Eggs Florentine

Main Ingredient: Cheese*Egg*Pepper Cuisine: American



1 package (10 ounces) chopped frozen spinach

1/4 cup of butter

2 tbsp. of all-purpose flour

2 cups of half-and-half

8 eggs, poached

salt and pepper to taste

Grated Parmesan cheese or shredded mild Cheddar cheese

Step 1Cook spinach according to package instructions, set aside.

Step 2In a small saucepan, melt butter.

Step 3Add flour; blend well.

Step 4Gradually add half-and-half, stirring constantly, until thickened and bubbly.

Step 5Place spinach in a lightly buttered shallow baking dish or individual ramekins.

Step 6Arrange cooked, drained eggs over the top of the spinach then pour white sauce over eggs.

Step 7If you don't feel like poaching eggs, you can bake the eggs in the oven (just leave them in for 12-15 minutes)

Step 8Sprinkle with salt, pepper, and cheese.

Step 9Bake eggs at 400° for 2 to 3 minutes, until cheese is melted and lightly browned.
