EGGS STUFFED WITH SMOKED SALMON AND CAVIAR

Ingredients

3 tablespoons chopped fresh chives

2 tablespoons olive oil

1 1/2 tablespoons fresh lemon juice

12 ounces thinly sliced cold-smoked salmon, finely chopped

1/4 cup salmon caviar

12 hard-boiled eggs, shelled, halved, whites and yolks separated

Additional chopped chives

Lemon wedges

Assorted fresh herb sprigs

Directions

Step 1Line rimmed baking sheet with paper towels.

Step 2Blend 3 tablespoons chives, oil, and lemon juice in medium bowl.

Step 3Mix in smoked salmon.

Step 4Fold in caviar.

Step 5Chop 4 egg yolks (reserve remainder for another use) and stir into salmon mixture.

Step 6Season to taste with ground black pepper.

Step 7Pile 1 generous tablespoon salmon mixture in the cavity of each egg-white half.

Step 8Arrange eggs on prepared sheet.

Step 9Cover with plastic; refrigerate up to 8 hours.

Step 10Place eggs on a platter.

Step 11Sprinkle with additional chives.

Step 12Garnish with lemon wedges and herb sprigs.

This looks interesting I have never tried caviar and I hope I do get to try and that I like it since I am quite picky.

    It is such an easy way to dress up a brunch with the girls. This recipe and a bottle of bubbly is a great excuse to invite some friends over.

Wow! I’ve never had caviar, I would have no idea how to work it into a meal. This looks great, if I ever get my hands on some caviar I’ll have to try it 🙂

    If you like salty things, you’ll probably love it. If you want to experiment with it without going crazy, just grab some water crackers, white mild cheeses or creme fraiche. So yummy.

Your egg recipe makes such a healthy filled egg meal! Since I’m always keen on the serving, I’d also love to do the lemon wedges and perhaps some coriander too.

    I love that there are some smoked caviars that are actually affordable, and when you use it as an enhancement to a breakfast dish, it adds a touch of fancy without breaking the budget.

I had caviar once from working in an Italian resturant and did not dislike it. I am against chives but all else looks yummy

    I definitely don’t dislike caviar…after oysters, it may be my second favorite thing. And if you are all against chives, I say just leave them out of the recipe…it’s all about making it your own!

I do love deviled eggs, which seems to be the base of this recipe. By adding salmon and caviar you are definitely taking this recipe to the next level. I’d love to taste it.

    Me too. I think I’m in love with a tasty breakfast full of omega threes. I think of this as a healthier alternative to eggs benedict (no muffin, no bechamel).

    Oh no! There is vegan caviar out there. I’ve tasted it and it is pretty good. Not sure if there is a good alternative to salmon though…I’ll have to ask around.

    It comes out so good. If you want to keep things a little more simple, you can always make a soft boiled egg and top it with just a dollop of caviar. Takes a lot less time and comes out just as good.
