Ingredients

6 hard-boiled eggs

3 1/2 tablespoons mayonnaise

3 tablespoons minced green onion

1 tablespoon minced seeded jalapeño chile

1 1/2 teaspoons minced mango chutney

1/2 teaspoon (scant) garam masala

Finely chopped radishes

Tips

If you don't have chutney (or don't feel like making it), a great substitute for mango chutney can be made with jam. Mix it with a touch of vinegar to get the sweet & sour flavor. Spice with ginger, cinnamon, clove, mustard seed, and salt and cayenne pepper to taste, and heat the mixture until the mustard seeds soften.

Step 1Shell eggs, then cut in half lengthwise.

Step 2Transfer yolks to small bowl and mash with a fork.

Step 3Mix in mayonnaise.

Step 4Stir in onion, jalapeño, chutney, and garam masala.

Step 6Spoon yolk mixture into whites.
