Ingredients

1/2 cup Leftover turkey, shredded or cubed

1/2 yellow onion (chopped small)

1 tablespoon Sofrito (you can get this at the Spanish section of the supermarket, it comes frozen and in a little plastic tub)

1/4 cup tomato paste

1 cup of rice

1/2 cup frozen peas

2 cups chicken broth

1 tablespoon olive oil

Directions

Step 1Heat the olive oil in a pan with a lid

Step 2Add the onion and cook until it is translucent

Step 3Add the sofrito, cook for about 1 minute

Step 4Put in the rice and the chicken broth

Step 5Bring to a boil

Step 6As soon as it is boiling, add the leftover turkey, tomato paste, and frozen peas

Step 7Cover the pot and bring to the lowest heat setting

Step 8Set the kitchen timer for 30 minutes

Step 9When 30 minutes hit, taste the rice to see if it is ready

Step 10If rice is hard, leave on a little longer

Step 11If rice is soft and mushy, then it is ready to eat
