SCRAMBLED EGGS WITH SMOKED SALMON AND CHIVES

8 large eggs
4 tablespoons chopped fresh chives
3 tablespoons milk
5 tablespoons butter
1 large onion, chopped
6 ounces thinly sliced smoked salmon, cut into strips

Step 1Beat eggs, 2 tablespoons chives and milk in bowl to blend.
Step 2Melt butter in heavy large skillet over medium heat.
Step 3Add onion and sauté until golden, about 15 minutes.
Step 4Add egg mixture.
Step 5Cook until almost set, stirring occasionally, about 4 minutes.
Step 6Mix in salmon.
Step 7Cook until eggs are cooked through but still moist, about 1 minute longer.
Step 8Season with salt and pepper.
Step 9Transfer eggs to platter; sprinkle with remaining 2 tablespoons chives.
