Vegetarian Vegetable Soup

This is a wonderful quick soup that will satisfy veggies & meat-eaters alike. Great on it's own or with a sandwich. Recipe may be adjusted for a crock pot. Simply add all ingredients except pasta and cook on low for 4-6 hours. add pasta and let simmer for an additional 20 minutes or cook pasta separately and add to soup.

Ingredients

1 small yellow onion, coarse chopped

1 carrot, peeled and cut into 3/4" chunks

2 ribs celery with leaves, cut into 3/4" chunks

1 toe garlic, minced

1 15oz can, diced tomatoes, drained

1/2 c. frozen shelled edamame

1/2 c. frozen peas

1 can whole kernal corn, or 1/2 cup frozen corn.

6 cups water or vegetable broth

3 vegetarian vegetable broth cubes (omit if using vegetable broth)

2 c. rotini pasta, uncooked

Directions

Step 1Heat water or broth to a medium simmer and add onion, carrot, celery, and garlic. Heat to boiling, reduce temperature to a medium and continue to simmer 15-20 minutes until onion and celery are transluscent and carrot is cooked. add tomatoes, corn, edamame, and peas and return to boil. add 2 c. of uncooked rotini, and simmer 7-9 minutes more until pasta is aldente.
