Instructions

  1. 1
Season chicken thighs with Creole seasoning, salt, and pepper on both sides.
  2. 2
Heat oil in a heavy skillet over medium-high heat. Brown chicken skin-side down until crisp, about 4–5 min; flip and brown other side 3 min. Transfer to a plate.
  3. 3
In the same skillet, reduce heat to medium. Add onion and cook until caramelized, about 5 min. Stir in garlic, paprika, thyme, and brown sugar; cook 1 min until fragrant.
  4. 4
Return chicken to skillet, skin-side up. Pour in Abita Amber and Worcestershire; bring to a simmer.
  5. 5
Cover, reduce to low, and simmer 25–30 min until chicken is fall-off-the-bone tender and sauce thickens.
  6. 6
Adjust seasoning; spoon sauce over chicken and serve hot with jasmine rice or buttered French bread.

Chef's Notes

Abita Amber’s subtle malt sweetness balances the spice—save a few ounces to sip while you cook.
