- 1½ cupsgraham cracker crumbs
- ⅓ cupunsalted butter, melted
- 3 tbspgranulated sugar
- 16 ozcream cheese, softened
- 1 cuppowdered sugar
- ½ cupcold brew concentrate (from 2 coffee pods or 4 tbsp ground coffee steeped in ½ cup water)
- 1 tspvanilla extract
- 1½ cupsheavy cream, chilled
- ⅓ cupchocolate-covered espresso beans for garnish
Recipe serves 10 people
Instructions
- 1Brew coffee concentrate: steep 2 pods (or 4 tbsp ground coffee) in ½ cup hot water 5 min, strain, and chill.
- 2Mix crumbs, melted butter, and 3 tbsp sugar; press into 9-inch springform pan. Chill crust 10 min.
- 3Beat cream cheese until fluffy. Add powdered sugar, cold-brew concentrate, and vanilla; beat until smooth.
- 4In separate bowl, whip heavy cream to stiff peaks. Fold whipped cream into coffee-cream cheese mixture.
- 5Spread filling over chilled crust. Smooth top and refrigerate at least 4 hours or overnight to set.
- 6Before serving, garnish with chocolate-covered espresso beans. Slice chilled and enjoy.
