  • 1½ cupsgraham cracker crumbs
  • ⅓ cupunsalted butter, melted
  • 3 tbspgranulated sugar
  • 16 ozcream cheese, softened
  • 1 cuppowdered sugar
  • ½ cupcold brew concentrate (from 2 coffee pods or 4 tbsp ground coffee steeped in ½ cup water)
  • 1 tspvanilla extract
  • 1½ cupsheavy cream, chilled
  • ⅓ cupchocolate-covered espresso beans for garnish

Instructions

    Brew coffee concentrate: steep 2 pods (or 4 tbsp ground coffee) in ½ cup hot water 5 min, strain, and chill.

    Mix crumbs, melted butter, and 3 tbsp sugar; press into 9-inch springform pan. Chill crust 10 min.

    Beat cream cheese until fluffy. Add powdered sugar, cold-brew concentrate, and vanilla; beat until smooth.

    In separate bowl, whip heavy cream to stiff peaks. Fold whipped cream into coffee-cream cheese mixture.

    Spread filling over chilled crust. Smooth top and refrigerate at least 4 hours or overnight to set.
