Ingredients

  • 3 largerusset potatoes, peeled
  • 4 cupsvegetable oil, for frying
  • 1 tspsalt
  • 1/2 tspwhite pepper, optional

Instructions

    Cut potatoes into ¼-inch thick sticks and place in a bowl of cold water for 30 minutes to remove excess starch.

    Drain potatoes and pat completely dry with a clean kitchen towel.

    Heat oil in a deep fryer or heavy pot to 325°F (160°C). Fry potatoes in batches for 4-5 minutes until just tender. Remove and drain.

    Increase oil temperature to 375°F (190°C). Return potatoes to oil and fry again in batches for 2-3 minutes until golden brown and crispy.

    Drain on paper towels, immediately season with salt and optional white pepper.

    Serve hot with chimichurri or your favorite Argentine sauce.

Chef's Notes

For extra crispy fries, freeze the partially fried potatoes after the first fry and let them rest 30 minutes before the final frying.
