Ingredients
- 2 cupsfresh green peas, shelled
- 1 mediumavocado, ripe
- 1/2 cupfresh mint leaves
- 1 largecucumber, peeled and roughly chopped
- 1/2 cupcold water (plus more to desired consistency)
- 2 tbspfresh lemon juice
- 1/2 tspsea salt
- 1/4 tspfreshly ground black pepper
- 1/2 cupmicrogreens (pea shoots or other tender sprouts)
Recipe serves 4 people
Instructions
- 1Prepare a large bowl of ice water and set aside half of the fresh peas for garnish.
- 2Add remaining peas to a high-speed blender with the cucumber, avocado, mint leaves, lemon juice, salt, and pepper.
- 3Blend on high, adding cold water gradually until soup reaches your desired consistency. Chill for 10 minutes.
- 4Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.
- 5Divide soup among chilled bowls, top with reserved fresh peas, a swirl of olive oil, and a generous sprinkle of microgreens.
- 6Serve immediately for maximum freshness and color.

Chef's Notes
For extra silkiness add an additional tablespoon of olive oil during blending. If using frozen peas, thaw completely under cold running water first.
