Ingredients

  • 2 lbboneless skinless chicken thighs
  • 1/2 cupplain yogurt
  • 1/4 cupfresh lemon juice
  • 1/4 cupapple cider vinegar
  • 3 clovesgarlic, minced
  • 1 tbspcumin
  • 1 tspcoriander
  • 1 tsppaprika
  • 1/2 tspcinnamon
  • 1/2 tspcayenne pepper
  • 1/4 cupolive oil
  • 4 piecespita bread
  • 1 cupgarlic toum
  • 1/2 cuppickled turnips
  • 1 medtomato, sliced
  • 1/2 medred onion, thinly sliced
  • 1/4 cupfresh parsley, chopped

Recipe serves 4 people

Instructions

    In a large bowl, whisk together yogurt, lemon juice, vinegar, garlic, spices and olive oil.

    Add chicken, toss to coat thoroughly, cover and refrigerate for at least 2 hours or overnight.

    Preheat oven to 400°F. Arrange chicken on a baking sheet in a single layer.

    Bake 25-30 minutes, turning once, until chicken is golden and cooked through.

    Allow chicken to rest 5 minutes, then thinly slice against the grain.

    Warm pita bread on griddle or in microwave for 30 seconds.

    Spoon toum onto pita, add sliced chicken, pickled turnips, tomato, onions and parsley.

    Roll tightly, wrap in foil, and serve immediately with extra toum on the side.

Chef's Notes

For extra authenticity, cook on a vertical spit if available. Chicken can be grilled over charcoal for a smokier flavor. Figure 2-3 ounces of chicken per serving for a generous wrap.
