Ingredients
- 2 lbboneless skinless chicken thighs
- 1/2 cupplain yogurt
- 1/4 cupfresh lemon juice
- 1/4 cupapple cider vinegar
- 3 clovesgarlic, minced
- 1 tbspcumin
- 1 tspcoriander
- 1 tsppaprika
- 1/2 tspcinnamon
- 1/2 tspcayenne pepper
- 1/4 cupolive oil
- 4 piecespita bread
- 1 cupgarlic toum
- 1/2 cuppickled turnips
- 1 medtomato, sliced
- 1/2 medred onion, thinly sliced
- 1/4 cupfresh parsley, chopped
Recipe serves 4 people
Instructions
- 1In a large bowl, whisk together yogurt, lemon juice, vinegar, garlic, spices and olive oil.
- 2Add chicken, toss to coat thoroughly, cover and refrigerate for at least 2 hours or overnight.
- 3Preheat oven to 400°F. Arrange chicken on a baking sheet in a single layer.
- 4Bake 25-30 minutes, turning once, until chicken is golden and cooked through.
- 5Allow chicken to rest 5 minutes, then thinly slice against the grain.
- 6Warm pita bread on griddle or in microwave for 30 seconds.
- 7Spoon toum onto pita, add sliced chicken, pickled turnips, tomato, onions and parsley.
- 8Roll tightly, wrap in foil, and serve immediately with extra toum on the side.

Chef's Notes
For extra authenticity, cook on a vertical spit if available. Chicken can be grilled over charcoal for a smokier flavor. Figure 2-3 ounces of chicken per serving for a generous wrap.
