Ingredients
- 3 ozcorned beef, thinly sliced
- 1/4 cupsauerkraut, drained
- 2 slicesSwiss cheese
- 2 slicesrye bread
- 1 tbspThousand Island dressing
- 1 tbspbutter, softened

Instructions
- 1Preheat a skillet or griddle over medium heat (350°F/175°C).
- 2Spread butter evenly on one side of each rye bread slice.
- 3Flip both slices butter-side-down and layer one slice with Swiss cheese, corned beef, sauerkraut and second slice of cheese.
- 4Drizzle ketchup-based dressing over the layered ingredients and top with remaining bread slice butter-side-up.
- 5Place sandwich onto hot skillet; press gently and cook 3-4 minutes until golden brown.
- 6Flip and continue to grill 3-4 minutes more until cheese is melted and bread is crisp.
- 7Remove from heat, rest 1 minute, cut diagonally and serve hot.

Add an extra layer of coleslaw for crunch or substitute pastrami for corned beef if desired. Press gently with a spatula while grilling to ensure even browning and melting.
