Ingredients

  • 3 ozcorned beef, thinly sliced
  • 1/4 cupsauerkraut, drained
  • 2 slicesSwiss cheese
  • 2 slicesrye bread
  • 1 tbspThousand Island dressing
  • 1 tbspbutter, softened

Instructions

    Preheat a skillet or griddle over medium heat (350°F/175°C).

    Spread butter evenly on one side of each rye bread slice.

    Flip both slices butter-side-down and layer one slice with Swiss cheese, corned beef, sauerkraut and second slice of cheese.

    Drizzle ketchup-based dressing over the layered ingredients and top with remaining bread slice butter-side-up.

    Place sandwich onto hot skillet; press gently and cook 3-4 minutes until golden brown.

    Flip and continue to grill 3-4 minutes more until cheese is melted and bread is crisp.

    Remove from heat, rest 1 minute, cut diagonally and serve hot.

Chef's Notes

Add an extra layer of coleslaw for crunch or substitute pastrami for corned beef if desired. Press gently with a spatula while grilling to ensure even browning and melting.
