- 2 lbchicken wings, tips discarded
- 1 tbspbaking powder, aluminum-free
- 1 tspkosher salt
- 1 tspgarlic powder
- 1 tsppaprika
- 1/2 cupBuffalo sauce (for Buffalo version)
- 1/2 cupBBQ sauce (for BBQ version)
Recipe serves 4 people
Instructions
- 1Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and set a wire rack on top.
- 2Pat wings dry with paper towels to remove excess moisture.
- 3In a large bowl, toss wings with baking powder, salt, garlic powder, and paprika until evenly coated.
- 4Arrange wings in a single layer on the wire rack, skin side up, leaving space between each wing.
- 5Bake for 20 minutes, flip wings, then bake another 25–30 minutes until golden and crispy.
- 6Optional: In the last 5 minutes of cooking, toss desired batch of wings with Buffalo or BBQ sauce in a bowl.
- 7Serve hot, plain or tossed in sauce, with celery and dipping sauce on the side.
