Ingredients

  • 2 lbchicken wings, tips discarded
  • 1 tbspbaking powder, aluminum-free
  • 1 tspkosher salt
  • 1 tspgarlic powder
  • 1 tsppaprika
  • 1/2 cupBuffalo sauce (for Buffalo version)
  • 1/2 cupBBQ sauce (for BBQ version)

Recipe serves 4 people

Instructions

    Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and set a wire rack on top.

    Pat wings dry with paper towels to remove excess moisture.

    In a large bowl, toss wings with baking powder, salt, garlic powder, and paprika until evenly coated.

    Arrange wings in a single layer on the wire rack, skin side up, leaving space between each wing.

    Bake for 20 minutes, flip wings, then bake another 25–30 minutes until golden and crispy.

    Optional: In the last 5 minutes of cooking, toss desired batch of wings with Buffalo or BBQ sauce in a bowl.

    Serve hot, plain or tossed in sauce, with celery and dipping sauce on the side.
