Instructions
- 1In a large bowl whisk flour, baking powder, salt, and sugar together until combined.
- 2Make a well in the center, pour in hot water, and mix with a fork until shaggy dough forms.
- 3Turn dough onto a floured surface; knead 2–3 minutes until smooth and pliable.
- 4Divide dough into 8 equal pieces; roll or stretch each into a 6-inch round and poke a small hole in the center with a fingertip.
- 5Heat 4 cups oil in a heavy skillet or Dutch oven to 365 °F (185 °C).
- 6Slide one round at a time into hot oil; fry 45–60 seconds per side, until puffed and golden.
- 7Drain on paper towels; serve warm plain, with honey, or load with chili and toppings.
