  • 3 cupsall-purpose flour
  • 1 tbspbaking powder
  • 1 tspsalt
  • 1 tbspgranulated sugar
  • 1 cuphot water
  • 4 cupsvegetable oil (for frying)

    In a large bowl whisk flour, baking powder, salt, and sugar together until combined.

    Make a well in the center, pour in hot water, and mix with a fork until shaggy dough forms.

    Turn dough onto a floured surface; knead 2–3 minutes until smooth and pliable.

    Divide dough into 8 equal pieces; roll or stretch each into a 6-inch round and poke a small hole in the center with a fingertip.

    Heat 4 cups oil in a heavy skillet or Dutch oven to 365 °F (185 °C).

    Slide one round at a time into hot oil; fry 45–60 seconds per side, until puffed and golden.

    Drain on paper towels; serve warm plain, with honey, or load with chili and toppings.

Keep dough rounds covered with plastic wrap to prevent drying. Add ½ tsp ground cinnamon for sweet frybread variations, or dust finished breads with powdered sugar.
