  • 2 lbsbone-in chicken pieces
  • 2 cupsbuttermilk
  • 1 tbsphot sauce
  • 1 tspsalt
  • 1/2 tspblack pepper
  • 2 cupsall-purpose flour
  • 1/2 cupcornstarch
  • 1 tbsppaprika
  • 1 tbspgarlic powder
  • 1 tspcayenne pepper
  • 1 tspsalt
  • 1/2 tspblack pepper
  • 3 cupspeanut oil for frying

Instructions

    Place chicken in a large bowl with buttermilk, hot sauce, 1 tsp salt, and 1/2 tsp pepper. Cover and marinate at least 4 hours or overnight.

    Combine flour, cornstarch, paprika, garlic powder, cayenne, 1 tsp salt, and 1/2 tsp pepper in a shallow dish.

    Remove chicken from marinade, allowing excess to drip off, and dredge in flour mixture; press firmly to adhere.

    Heat 3 cups peanut oil to 325°F in a deep heavy pot or deep fryer.

    Fry chicken in batches 12–15 minutes, turning once, until golden brown and internal temperature reaches 165°F. Rest on a wire rack 5–10 minutes before serving.
