- 2 lbsbone-in chicken pieces
- 2 cupsbuttermilk
- 1 tbsphot sauce
- 1 tspsalt
- 1/2 tspblack pepper
- 2 cupsall-purpose flour
- 1/2 cupcornstarch
- 1 tbsppaprika
- 1 tbspgarlic powder
- 1 tspcayenne pepper
- 1 tspsalt
- 1/2 tspblack pepper
- 3 cupspeanut oil for frying
Recipe serves 4 people
Instructions
- 1Place chicken in a large bowl with buttermilk, hot sauce, 1 tsp salt, and 1/2 tsp pepper. Cover and marinate at least 4 hours or overnight.
- 2Combine flour, cornstarch, paprika, garlic powder, cayenne, 1 tsp salt, and 1/2 tsp pepper in a shallow dish.
- 3Remove chicken from marinade, allowing excess to drip off, and dredge in flour mixture; press firmly to adhere.
- 4Heat 3 cups peanut oil to 325°F in a deep heavy pot or deep fryer.
- 5Fry chicken in batches 12–15 minutes, turning once, until golden brown and internal temperature reaches 165°F. Rest on a wire rack 5–10 minutes before serving.
