- 1 lblarge shrimp, peeled and deveined
- 1 cuplong-grain rice, rinsed
- 1¼ cupJarritos Mandarin soda
- ¼ cupJarritos Tamarind soda
- 2 tbsptamarind concentrate
- 1 tbsphoney or agave syrup
- 2 clovesgarlic, minced
- 1 smallred bell pepper, thinly sliced
- ¼ cupred onion, diced
- 1 earcorn, kernels cut off (about ¾ cup)
- 1 tbspvegetable oil
- 1 tspsmoked paprika
- ½ tspground cumin
- to tastesalt & pepper
- 2 tbspfresh cilantro, chopped
- 1lime, cut into wedges
- optionalthin jalapeño rounds for garnish
Recipe serves 4 people
Instructions
- 1In a small bowl whisk tamarind soda, tamarind concentrate, honey, paprika, cumin, and a pinch of salt; set glaze aside.
- 2Combine rinsed rice and Mandarin soda in a small pot. Bring to boil, cover, lower heat to simmer for 15 minutes or until liquid is absorbed. Fluff and keep warm.
- 3Heat oil in a large skillet over medium-high. Add onion, bell pepper, and corn; sauté 3 minutes until slightly charred.
- 4Push veggies aside, add garlic and shrimp; season with salt & pepper. Sear 2 minutes per side until shrimp just turn pink.
- 5Pour reserved tamarind glaze over shrimp and vegetables; cook 2 minutes, stirring, until sauce thickens and coats everything.
- 6Serve shrimp mixture over mounds of Mandarin-scented rice. Garnish with cilantro, jalapeño if using, and lime wedges.

Chef's Notes
Swap shrimp for chicken breast strips or roasted cauliflower to suit preference. For extra soda sparkle, deglaze the pan with an extra splash of cold Jarritos Lime right before serving.
