- 4 cupsseedless watermelon, cubed
- 3 tbspsoju (or to taste)
- 1 tbspfresh lime juice
- 1 tsphoney or Korean oligosaccharide syrup
- 1 pinchfine sea salt
- 1 tbspfresh mint, chiffonade
- 1 tsproasted white sesame seeds
- 1⁄2 tspgochugaru or chili flakes (optional)
Recipe serves 4 people
Instructions
- 1In a small bowl whisk together soju, lime juice, honey, and salt until honey dissolves to make dressing.
- 2Place watermelon cubes in a large serving bowl, drizzle with the dressing, and gently toss to coat.
- 3Let sit 5–10 minutes to allow flavors to mingle; the soju will lightly season the fruit.
- 4Just before serving, scatter fresh mint, sesame seeds, and a pinch (or more) of gochugaru on top.
- 5Serve well-chilled in small bowls or cups; best enjoyed within an hour to keep texture perky.
