Ingredients

  • 4 cupsseedless watermelon, cubed
  • 3 tbspsoju (or to taste)
  • 1 tbspfresh lime juice
  • 1 tsphoney or Korean oligosaccharide syrup
  • 1 pinchfine sea salt
  • 1 tbspfresh mint, chiffonade
  • 1 tsproasted white sesame seeds
  • 1⁄2 tspgochugaru or chili flakes (optional)

Recipe serves 4 people

Instructions

    In a small bowl whisk together soju, lime juice, honey, and salt until honey dissolves to make dressing.

    Place watermelon cubes in a large serving bowl, drizzle with the dressing, and gently toss to coat.

    Let sit 5–10 minutes to allow flavors to mingle; the soju will lightly season the fruit.

    Just before serving, scatter fresh mint, sesame seeds, and a pinch (or more) of gochugaru on top.

    Serve well-chilled in small bowls or cups; best enjoyed within an hour to keep texture perky.
