Ingredients

  • 2 largeyellow onions
  • 2 cupsbuttermilk
  • 2 cupsall-purpose flour
  • 1 cupcornstarch
  • 2 tspsalt
  • 1 tspblack pepper
  • 1/2 tsppaprika
  • 1/4 tspcayenne pepper
  • 1 largeegg
  • 1 cupcold sparkling water
  • as needed vegetable oil for frying

Instructions

    Peel and slice onions into 1/2-inch thick rings; separate rings and soak in buttermilk for 10 minutes.

    In a large bowl whisk together flour, cornstarch, salt, pepper, paprika and cayenne.

    Remove half the flour mixture to a second bowl; whisk egg and sparkling water into one bowl to create thin batter.

    Heat 2-3 inches of oil to 350°F in a deep pot or fryer.

    Dredge each soaked onion ring in dry flour, then dip into batter, letting excess drip off.

    Fry rings 4-5 at a time, turning once, until golden brown—about 2–3 minutes.

    Drain on a wire rack set over paper towels; keep warm in 200°F oven while frying remaining rings.

    Serve hot with ketchup, ranch or dipping sauce of choice.

Chef's Notes

For extra crunch, double-dip: after batter, coat with panko crumbs before frying. Don't over-crowd oil—fry in small batches.
