- 2 largeyellow onions
- 2 cupsbuttermilk
- 2 cupsall-purpose flour
- 1 cupcornstarch
- 2 tspsalt
- 1 tspblack pepper
- 1/2 tsppaprika
- 1/4 tspcayenne pepper
- 1 largeegg
- 1 cupcold sparkling water
- as needed vegetable oil for frying
Recipe serves 6 people
Instructions
- 1Peel and slice onions into 1/2-inch thick rings; separate rings and soak in buttermilk for 10 minutes.
- 2In a large bowl whisk together flour, cornstarch, salt, pepper, paprika and cayenne.
- 3Remove half the flour mixture to a second bowl; whisk egg and sparkling water into one bowl to create thin batter.
- 4Heat 2-3 inches of oil to 350°F in a deep pot or fryer.
- 5Dredge each soaked onion ring in dry flour, then dip into batter, letting excess drip off.
- 6Fry rings 4-5 at a time, turning once, until golden brown—about 2–3 minutes.
- 7Drain on a wire rack set over paper towels; keep warm in 200°F oven while frying remaining rings.
- 8Serve hot with ketchup, ranch or dipping sauce of choice.
