- 8 ozprovolone cheese slice, ½-inch thick round or rectangular
- ½ tspdried oregano
- ¼ tspred pepper flakes
- 1 tspextra-virgin olive oil
- 1 loafcrusty bread (baguette or ciabatta), sliced
- 1 pinchcoarse sea salt
- 1 pinchfreshly ground black pepper

Instructions
- 1Preheat a small cast-iron skillet or grill pan over medium-high heat until very hot.
- 2Lightly brush both sides of the provolone with olive oil.
- 3Place the cheese in the hot pan and cook 2-3 minutes until underside is golden and edges begin to melt.
