Ingredients

  • 3 lbspork shoulder, cut in 2-inch cubes
  • 1 cupmandarin Jarritos
  • ¾ cuptamarind Jarritos
  • ½ cuplime Jarritos
  • 1 mediumwhite onion, quartered
  • 4 clovesgarlic, smashed
  • 2 tspkosher salt
  • 1 tspground cumin
  • ½ tspdried oregano
  • 2 tbspvegetable oil
  • 12 smallcorn tortillas, warmed
  • 1 cupdiced onion
  • ½ cupfresh cilantro leaves
  • 2 wholelimes, cut in wedges

Instructions

    Preheat oven to 325°F. Season pork cubes generously with salt, cumin, and oregano.

    Heat oil in a Dutch oven over medium-high. Sear pork on all sides until deep golden, about 8 minutes.

    Add quartered onion and garlic; cook 2 minutes. Pour in all three Jarritos; liquid should come halfway up the meat (add water if needed).

    Cover and braise in oven 2 hours, checking occasionally, until pork is fork-tender.

    Remove pork; shred with two forks. Skim fat from braising liquid, then boil liquid on stove until syrupy, 8–10 minutes.

    Return shredded pork to the glaze; cook over medium heat until sticky and caramelized.

    Serve carnitas on warm tortillas topped with onion, cilantro, and a squeeze of lime.
