- 3 lbspork shoulder, cut in 2-inch cubes
- 1 cupmandarin Jarritos
- ¾ cuptamarind Jarritos
- ½ cuplime Jarritos
- 1 mediumwhite onion, quartered
- 4 clovesgarlic, smashed
- 2 tspkosher salt
- 1 tspground cumin
- ½ tspdried oregano
- 2 tbspvegetable oil
- 12 smallcorn tortillas, warmed
- 1 cupdiced onion
- ½ cupfresh cilantro leaves
- 2 wholelimes, cut in wedges
Recipe serves 6 people
Instructions
- 1Preheat oven to 325°F. Season pork cubes generously with salt, cumin, and oregano.
- 2Heat oil in a Dutch oven over medium-high. Sear pork on all sides until deep golden, about 8 minutes.
- 3Add quartered onion and garlic; cook 2 minutes. Pour in all three Jarritos; liquid should come halfway up the meat (add water if needed).
- 4Cover and braise in oven 2 hours, checking occasionally, until pork is fork-tender.
- 5Remove pork; shred with two forks. Skim fat from braising liquid, then boil liquid on stove until syrupy, 8–10 minutes.
- 6Return shredded pork to the glaze; cook over medium heat until sticky and caramelized.
- 7Serve carnitas on warm tortillas topped with onion, cilantro, and a squeeze of lime.
